Smoky Jalapeño Cream Cheese Sausage Bites

A bold and cheesy take on the classic sausage ball, these bites deliver a perfect balance of spice, smokiness, and creamy richness. Instead of using canned ingredients, this version features fresh-roasted jalapeños and red bell peppers for a natural depth of flavor. These are ideal for game-day spreads, holiday appetizers, or even a savory breakfast on the go. Serve them with ranch dressing, chipotle aioli, or a creamy avocado dip.

Ingredients (for 1 dozen bites)

  • 1/4 lb hot pork sausage (uncooked)

  • 2 oz cream cheese (softened)

  • 2 tbsp finely diced red bell pepper

  • 1 tbsp finely chopped roasted jalapeño

  • 1/2 cup Bisquick or homemade baking mix

  • 1/2 cup shredded Mexican cheese blend

  • 1 tbsp finely chopped scallions (for garnish)

Scalable Ingredient Table

Instructions

  1. Preheat and Prepare
Preheat the oven to 400ºF. Line a rimmed baking sheet with parchment paper.

  2. Roast the Jalapeños
Place jalapeños over a gas burner or under a broiler until the skins blacken and blister. Let them cool, then peel off the charred skin, remove the seeds (if desired), and finely dice.

  3. Mix the Dough
In the bowl of a stand mixer fitted with a dough hook, combine sausage, cream cheese, red bell pepper, roasted jalapeño, Bisquick, and shredded cheese. Mix until well combined.

  4. Shape the Sausage Bites
Use a small or medium cookie scoop to portion out 1-inch sausage bites. Roll each one briefly by hand to ensure a more rounded shape.

  5. Bake
Arrange the bites on the prepared baking sheet, ensuring they are spaced evenly. Bake for 18–20 minutes or until golden brown and cooked through.

  6. Garnish and Serve
Let the bites rest for a few minutes before serving. Sprinkle with chopped scallions for a fresh pop of flavor. Serve warm with your favorite dipping sauce.

Storage and Reheating

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.

  • To freeze, arrange unbaked sausage bites on a baking sheet, freeze until solid, then transfer to a freezer-safe bag. Bake directly from frozen at 400ºF for 22–25 minutes.

Serving Suggestions

Pair these bites with a creamy dip like ranch, chipotle aioli, or a simple honey mustard. They’re great alongside fresh-cut veggies, jalapeño cornbread, or even served with scrambled eggs for a hearty breakfast.
