- Preheat your oven to 350°F and grease a 9x5-inch loaf pan.
- In a large mixing bowl, whisk together the mashed bananas, melted unsalted butter, brown sugar, eggs, and vanilla extract until smooth.3 ripe bananas, 1/2 cup unsalted butter, 2/3 cup brown sugar, 2 eggs, 1 tsp vanilla extract

- Add the dry mixture to the banana mixture. Fold in until just combined, then stir in the sour cream to finish the batter.1/2 cup sour cream
- Pour the batter into the prepared loaf pan. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
- Let the banana bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
- In a small bowl, stir together softened butter, honey, and ground cinnamon until whipped and creamy.4 tbsp unsalted butter, 1 tbsp honey, 1/2 tsp ground cinnamon
- Slice banana bread and serve warm or toasted with a generous spread of cinnamon honey butter.
Notes
If your bananas aren’t ripe enough, roast them at 300°F for 15–20 minutes (skin on) until soft and blackened. Let cool before using.
