10small flour tortillas

Instructions
Preheat oven to 400°F and line a baking sheet with parchment paper.
In a mixing bowl, combine shredded cheddar, pepper jack cheese, diced jalapeños, smoked paprika, garlic powder, and salt.
1 cup shredded cheddar cheese, 1 cup shredded pepper jack cheese, 2 jalapeños, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/4 tsp salt
Spoon a line of cheese mixture onto each flour tortilla, then roll tightly into taquitos.

Place taquitos seam-side down on the baking sheet and brush the tops lightly with olive oil using a pastry brush.

Bake for 20–25 minutes until golden brown and crispy.
Remove from oven and garnish with chopped cilantro. Serve with lime wedges on the side.

Notes
