Combine lime zest and sugar in a small bowl. Muddle and let sit for 5 minutes until fragrant and syrupy.

Wet the rim of each highball glass with lime juice and dip into toasted coconut. Set aside.

Add the lime oleo-saccharum, lime juice, coconut water, pineapple juice, vodka, cream of coconut, and egg white to a shaker with ice. Shake vigorously for 15 seconds.
