Ingredients

1 tbsp lime zest for oleo-saccharum
1 tbsp sugar for oleo-saccharum
1/4 cup lime juice freshly squeezed
1/2 cup coconut water unsweetened
1/4 cup pineapple juice
1/3 cup vodka
1 tsp cream of coconut for texture and richness
1 large egg white optional for froth
to top sparkling water coconut or lime flavor optional
as needed ice for shaking and serving
2 slice lime charred for garnish
2 tbsp toasted shredded coconut rim garnish

Instructions

Combine lime zest and sugar in a small bowl. Muddle and let sit for 5 minutes until fragrant and syrupy.

Wet the rim of each highball glass with lime juice and dip into toasted coconut. Set aside.
1/4 cup lime juice, 2 tbsp toasted shredded coconut
Add the lime oleo-saccharum, lime juice, coconut water, pineapple juice, vodka, cream of coconut, and egg white to a shaker with ice. Shake vigorously for 15 seconds.

Double strain into prepared glasses over fresh ice. Top with sparkling water and stir gently.

Notes

Skip the egg white for a lighter version. Want a frozen version? Blend everything with ice instead of shaking. Craving more richness? Add 1 oz coconut cream and reduce coconut water by half.
